女兒很愛巧克力豆餅乾,每次和我去喝咖啡時總期待著我也點一份chocolate chip cookie (或 oatmeal raisin cookie)給她,不過一片還頗貴的呢!既然自己會做,那就做點存糧吧!
不過,得營養均衡一下!這次將2/3的麵粉以穀物取代。正好前幾天買了一包Rogers的9 Grain可以派上用場了。
我參考了包裝上附的食譜,不過我減少了糖、奶油和巧克力豆的分量,做出適合我們自己的口味囉!(女兒向來不愛麵包餅乾添加了多種穀物的口感,但是這個卻能接受呢,還蠻喜歡吃的。或許是看在巧克力豆的份上吧!所以好壞的媽媽~我故意減少巧克力分量,不想讓她吃太多啦!)
1 ¼ cups 9 Grain (125g)
¾ cup All-purpose flour (85g)
½ tsp. Baking soda
¼ tsp. salt
½ cup butter (115g) (我只用80g)
½ cup brown sugar (100g) (我只用90g)
1 egg
½ tsp. Vanilla extract
½ cup chocolate chips (我只用60g)
Preheat oven to 350F
- Combine 9 grains, flour, baking soda and salt; set aside
- Cream butter and brown sugar together;
- Beat in egg and vanilla extract
- Add dry mixture and chocolate chips; stir well
- Drop from a teaspoon onto greased cookie sheets and flatten with a fork.
- Bake 10-12 minutes.
